So how have you all been?!? I’m doing ok. Pretty good actually. ***KNOCK ON WOOD***
I had PIZZA this past weekend (yes… I still call it pizza even without the cheese!). I used to eat it all the time until about a year ago when I realized it was adding to my tummy woes. So I cut it out. I blamed the pineapple and the sauce and figured it had to be too acidic for me. Fast forward a year and I have left out the pineapple but have been slowly reintroducing cooked tomatoes (specifically, I have been putting spaghetti sauce on my pasta again because really, plain pasta is gross). So this weekend I wanted pizza so I had some. Simple as that. A small mushroom with no cheese in case you’re curious. And YUMMY YUMMY YUMMY! Can’t wait to have it again. It’s really too bad about the pineapple though, Hawaiian or just plain pineapple pizza is my favorite but hell, I’ll take what ever I can get!!!
I’ve made my yearly appointment with my gastro doc. End of next month I get to go in and tell him how I’m doing. So I guess I had better start keeping better track of things. I want to write down more specifically how I’m doing, how things are flowing and how much medicine I take every day – stuff like that. And I have a few questions that have been rattling around my brain. So I have to remember to write stuff down between now and then. And I have to remember to take a book with me when I go to my appointment because every time I go to see him he’s running about an hour behind and there is only so long I can stand to look at the pictures on his walls.
I tried a new chicken recipe last night. Since it was just a new way to cook it with no new ingredients it doesn’t really count as an “is this food?” thing but mmmmm… yum. It’s always good to find a new way to cook an old favorite. Really simple actually, should have thought of it myself instead of needing a cooking website to point it out to me. Herb roasted chicken and veggies, yummy yummy….
Spring has finally arrived in New England and it’s GRILLING time! wahoo! I also had grilled chicken with BBQ sauce this weekend (yea, I went all out, acid pasta sauce AND BBQ sauce! I was feeling brave and perhaps a little high on the sunshine that graced us with it’s presence). There is a new sweet and tangy BBQ sauce that I found on the store shelves this weekend and it was delicious! And, even better, the next day the chicken made great chicken salad sandwiches! Also, I think I am going to try the recipie from last night on the grill. If I throw all the stuff in a bag and let it sit and marinate, it will make fantastic kabobs…
I have been slowly increasing my fiber intake. And it seems to be helping the bowel movements a lot. (ummm…especially when I have all that mayo in the chicken salad sandwhiches! lol). BUT! (there is always a butt isn’t there??) There is a side effect. I am so much more gassy! ARGH! One step forward, two smelly steps back. So I’m torn - do I decrease the fiber or increase the GasX (for the record, I don’t take GasX but I really can’t remember the name of what I do take at the moment…moving on…)??? I think I am going to sit on it another week and see if things deflate on their own. Seriously, the gas pains totally suck but I am thinking the diareah sucks more. But it’s a close call.
Did you know that? I didn’t. ooops. Now that the month is almost over, you can go here for some information.
Anyone know a good cookbook for cooking without dairy/lactose? I was wondering the local mega-bookseller and well… walked away without one because I couldn’t pick one. Any suggestions?

That is all I can say. I don’t know what took me so long to try these. Someone at work had them a few weeks ago and I have since become obsessed. I tend to stay away from anything made with grains that are still whole. If I can see seeds or grains, well… from past experience, do not work very well with me. But I have been eating these for weeks and things seem fine. They are great when I want something that resembles a chip. Sometimes you just need something that crunches ya know?
I can’t decide if I actually want to post this post or not. I can’t seem to write it so that I don’t sound like an idiot. I keep rewriting it but it seems to get worse. So I’m just going to post it and move on. Oh well.

Rule Number 2:
Think BEFORE you eat!
I tend to forget to think enough before I eat something. If I am feeling great at that particular moment, I just may eat a bite (or two. or ten) of something I probably shouldn’t have, even if just yesterday I had the worst IBS reaction I’ve had in weeks.
I’m just good like that. Outa sight outa mind.
Or maybe, outa the bathroom outa mind.
I also sometimes forget what I shouldn’t eat. HOW does that happen??? Has IBS killed my brain cells or something?? I don’t know how I do it, but I tend to forget that something gave me a stomach ache last time I ate it until I have another stomach ache from eating it again. Luckily, the frequency of this occurring has declined greatly the last few years. But that could be because I eat nothing since I can’t remember what I can eat! haha That’s why I keep trying new recipes, I need to replace the foods I have forgotten I can eat!
