I made a couple new recipes this weekend. No new foods, just new ways to make the food I normally eat. For this trip into New Recipieville I took along my Betty Crocker cookbook. And I found a fantastic recipe for chicken pot pie! Where has this recipe been????? I can’t believe I hadn’t tried it before. yummmmmm! I’ll have to make it again soon.
Wahoo, something new and yummy to do with chicken!
now I have to go scan a different cook book for something to try this weekend…

Have you tried going by your local half price books?
Betty Crocker is all fine and good,
but what you really need are
some Vegan and Whole food cook books….
You can add Chicken Turkey or whatever…..
But it gives you more of a healthy and fresh perspective.
And it is so easy to substitute and change the recipes to suit yourself.
Last night
In a large Saucepan skillet
I had chicken tenders tossed in a bit of sea salted flour,
sauted’s till crispy. removed to pie plate…
then I used the leftover extra Virgin Olive oil….
to saute’ my mushrooms celery onion and fresh garlic(not jarred!)
I put the Chicken back in….with 1/2 -1 cup of organic Chicken broth.
Put the lid on and cook 15 min
…..then I had Unsweetened soy milk and a bit of flour.
I mixed that up, put it in there, and it made this AWESOME gravy!
I served it with red and yellow tomatoe slices….
and Mrs Leepers Corn veggie pasta

I am still a meat eater, but I try to buy organic when possible.
I totally respect both Vegans and Omnivores the same…
I have tried the tofutti cream cheese and it is JUST as good as cream cheese. Yummy! You can make a cheesecake easy!
I am about to get some red star nutritional yeast,
and make nacho cheese sauce…
Today though, I am making applesauce Muffins…..

You can also make a Cheesecake with the cookies….
Oreo Cheesecake
Oreo Cheesecake (with raspberry sauce) This cheesecake is from Delicious Choices. I simply used a store-bought Oreo crust
(JUST CRUSH NEWMANS COOKIES AND ADD 1/4 cup melted VEGAN BUTTER AND PRESS IN A CHEAP FOIL PIE PAN)
and added about 1 cup crushed Oreo-style sandwich cookies to the batter before baking. Since I believe the Delicious Choices recipes are no longer being sold, I will post it here. If you DO find them, please support the author and buy them.
2- 8oz pkg Tofutti Better Than Cream Cheese
2 cups Sour Supreme Sour Cream
1 cup sugar
1 1/2 tsp vanilla
1/2 cup flour
1 1/2 Tbsp (1 Tbsp + 1 1/2 tsp) egg replacer powder dissolved in 1/2 cup water
(OR JUST ADD 2 EGGS)
1 cup crushed Oreo-style cookies
Comb. cream cheese, sour cream, and sugar until fluffy.
Add vanilla, flour, and egg replacer/water, and cookies beating well after each addition.
Pour into prepared 8″ springform pan. Set in 8″ pan in a 10″ springform pan. (NEWMAN OREO FOIL PAN HA HA)
Pour hot water into 10″ pan until 1/2 of the 8″ pan is submerged.
(NOT NESSISARY, just check on the cheesecake after a hour or so…….)
Place in preheated 300F oven and cook 1 1/2-2 hours until center is set and sides begin to pull away from pan.
Do not unmold cheesecake until completely chilled. Chill 10 hours or more.
Raspberry Sauce:
1 standard bag frozen raspberries
sugar
water
cornstarch
more water
maple syrup (opt.)
*Set bag of raspberries on counter and thaw. Place thawed raspberries (and juice) into a sauce pan and add sugar. The amount is up to you. I would say I used 1/3 a cup or less, but added some maple syrup. It’s to taste.
*Add a little water (1/4 cup?) and bring to a boil, whisking often.
*Mix about 1 Tbsp. corn starch/arrow root starch in a couple Tbsp water and dissolve completely. Add cornstarch/water right before mixture comes to a boil. *Continue to cook and whisk until thick. Set aside to cool.
*optional for presentation: strain through a fine mesh strainer. Put strained sauce in a squeeze bottle and decorate anything you want. The seeds can be added to bread or yogurt for breakfast or whatever. Don’t throw them out.
