ok, so it’s already January 4th. I feel like the year is racing away from me already! How sad is that? It does not bode well for the rest of this year. Perhaps it was my two long weekends home with the Hubby and the Kid that messed my brain all up.
The last few weeks have been hectic life-wise but pretty quiet IBS-wise. I survived my 5 day Christmas “vacation” with only one bad night. Spent a little time in the bathroom with the Hubby keeping me company and I was alright the next day (we where at my in-laws house so he kept me company in case I needed anything since I would not have been able to yell for him from the bathroom like I do here at home. what a great hubby I have!)
I give all the credit for my surviving the holiday season at the in-laws to my sister-in-law. She ROCKS! She had already gone shopping before we got there and already had food I could eat (milk, the right butter, the right bread, etc). And she is always aware of what and how she is cooking so that there is something yummy that I can eat. And to top it off, she is a wonderful cook. She made mashed potatoes! I know, simple right? For some reason that I don’t understand (perhaps because they are a ton of work??) I never make mashed potatoes. Ever. I always nuke potatoes in the microwave. She makes fantastic mashed potatoes. I haven’t been able to eat mashed potatoes in…. sheesh… I can’t remember the last time I had them. Anyway, her cooking made my day (ahh the simple things in life…).
It was hard to avoid all the treats though. I love peanut butter fudge. And baklava. And lots of other treats that only come out at the holidays. But I was really good, I didn’t eat anything I shouldn’t. But I sniffed a lot of stuff! haha (this is what my life has come to ~ sniffing cookies to get my sweet tooth fix!)
I had a 5 day weekend last weekend. It was great! Except it throws the schedule all off. We all got into the habit of sleeping two hours later than usual. I was surprised though, I did ok. I was afraid by Sunday or Monday I would be in trouble but I felt pretty good all weekend. I even got to spend one whole day shopping with my husband! Wahoo! Spending money on gadgets and gizmos and mixers. Fantastic!
Now it’s back to work and reality. booooo!

What’s new with us?
Well, My daughter Lilly and I
have a confirmed case of Dairy Intolerance.
So, we have switched completely off of dairy.
Not that bad mind you…
except for eating out…
you would be shocked what they put in food!
Casein Whey and Lactose are all a no no
they put whey in MEAT and Pickle at some places….
and that is just the tip of the ice burg, Girl!
Maybe you and I have this in Common?
which would explained why we have bouts of sludge for no reason….
or constipation….
it even explained my daughter having a seizure ……
and the low blood sugar issues.
Something to consider…
we had HIGH wheat levels in our blood.
we thought it was celiac….
but, lo and behold,
when an intolerant person eats Dairy,
the Protines pass though very fast and undigested.
and that’s why the Wheat level was high
Oh, and about the kitchen gadgets!
if you wanna travel, and not have to eat out,
(at least for breakfast)
We had taken a trip to the Texas hill country,
Kerrville Tx to be exact…for new years…..
and we had to eat….
So, we tried Denny’s and Chilli’s and we kept getting sick…
even on their Dairy free foods suggested on their website….
but,…..we found that JACK in the box
jumbo jack
was a good alternative.
the meat is just ground meat and salt….
Hold the onions and Pickle….and you are good to go..

a Hotpot can make your life easy…
making oatmeal (you make the packets your self
with ziploc bags
1/2 cup 1 minute oats, cinnamon, brown sugar, raisins
and bring your own corel bowl

and then theres the Egg cooker!
it does NOT smell.
the eggs are perfect!
they do not grey or smell sulfuric after a day….
(remove from shell to store in icebox)
we used Large Egg lands best eggs….
In the Hampton hotel bathroom ….
on the long counter….
I set up a paper bowl with 7 eggs then I rinsed then off
and a paper plate with a paper towel on it.
to place the eggs on to pat dry fast
then i put the Cuisinart egg cooker together with the water sand hole punched eggs
You get the hang of pooping the hole in the top of the eggs it’s great… just never rest the egg on your palm…firmly suspend it between all your fingers with one hand
If it cracks a bit it’s still fine to cook.
then Lysol and wipe down everything
with paper towel really quick…
(be sure to bing a small bottle of deluded dish soap
and strait white vinegar.
you must wipe the hotplate in the Cuisinart with vinegar…..
and the soap is useful for cleaning the hotpot
and other egg cooker parts really fast.
I also take those body washer poofy ball things,
)
I take them apart and cut 2-3 inch rings to scrub with.
bring some of those too.
When it comes to lunch,
)
you can use your imagination…and some canned Chicken
here is what we did
SEASONED myself….Cous Cous… 2 cups….in Ziplock bag
Use a double foil lined 9×5inch loaf pan,
make a foil lid…Pour in the seasoned cous cous….
and use your hot pot to boil the water….
cover and set for 5 min…..
then toss in the chicken……to warm up…..
serve with whatever fruit you want……
we ate a Jack in the box for Dinner
